Vegan Crap Cakes( perfect for brunch or dinner)

 



Ingredients
-Drained hearts of palm
-chickpeas
-pom vinegar vegan mayo
-old bay seasoning
-mustard
-Add a half a cup of panko bread crumps
- teaspoon olive oil
-arugula or other salad greens

Directions

step1- place the drained hearts of palms into a food processor and pulse a few times until they're chopped up but still have a crabby texture

step2- add the chickpeas, pom vinegar, vegan mayo and old bay seasoning and mustard

step3: pulse a few more times to combine

step4: add half a cup of panko breadcrumbs and pulse one more time to combine all the ingredients together

NB The butter should hold together in your hand when formed

step5: pour the panko into a shallow bowl

step6- tightly form the batter into round cakes and coat the panko on both sides

step7: oil the preheated pan 

step8: fry the cakes on each side for about 3minutes or until they are golden brown and warm through 

step9: transfer the cakes to a paper towel-lined plate to absorb excess oil.

step10: toss some arugula or other salad greens into a bowl and add a bit of olive and lemon

step 11: use your hands to slightly massage them.

step12: serve the crap cakes over the greens and tops with a spoon of vegan mayo on top with a lemon wedge on the side

and serve!!!!
